Description

In this recipe, we’ll be making a homemade blueberry bread that’s easy to whip up and sure to become a family favorite. The batter comes together quickly, and the result is a tender, flavorful loaf that stays moist for days. This recipe uses fresh blueberries for the best taste, but frozen blueberries work just as well. Whether you’re an experienced baker or just starting out, this blueberry bread is a must-try!

Ingredients
  • 1 ½ cup all-purpose flour
  • ¾ cups granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoons salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 ½ cup fresh blueberries
  • 1 teaspoon lemon zest (optional)
  • 1 tablespoon coarse sugar (for topping)
Instructions
  1. Preheat the Oven and Prepare the Pan

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper for easy removal.

  2. Mix the Dry Ingredients

In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.

  3. Combine Wet Ingredients

In a separate bowl, whisk milk, vegetable oil, large egg, and vanilla extract until well combined.

  4. Blend Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—the batter should be slightly lumpy.

  5. Fold in Blueberries

Gently fold in fresh blueberries. If you’re using frozen blueberries, toss them in a bit of flour before folding them into the batter to help prevent them from sinking.

  6. Bake the Bread

Pour the batter into the prepared loaf pan and sprinkle the top with coarse sugar if you like a little extra crunch.

Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

  7. Cool and Enjoy

Allow the blueberry bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Note
  • For a smoother batter, ensure that your milk, egg, and any other cold ingredients are at room temperature before mixing.
  • Lightly dusting blueberries with flour before adding them to the batter helps prevent them from sinking and keeps them evenly distributed throughout the bread.
  • Allow the bread to cool in the pan for at least 10 minutes before transferring it to a wire rack. This helps it set and reduces the risk of it breaking apart.
