Ingredients
  • 2 1/2 cups any Pancake Mix
  • 2 large eggs
  • 1 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • Oil for frying
Instructions
  1. Prepare the Batter:

    In a large mixing bowl, whisk together the eggs, granulated sugar, milk, and vanilla extract until well combined.

  2. Add Dry Ingredients:

    Add the pancake mix, salt, and granulated sugar to the liquid mixture. Stir until the ingredients are well incorporated. Avoid overmixing.

  3. Heat the Oil:

    Pour approximately 1 1/2" - 2" of oil into a heavy-bottomed fry pan, Dutch oven, or cast iron pan. Heat the oil to 375 degrees F. You can test if the oil is ready by dropping a small drop of the batter into it; it should immediately bubble and sizzle.

  4. Fry the Funnel Cakes:

    Pour about 1/4 of the batter into a funnel, piping bag, or squeeze bottle, covering the opening with your finger until ready to dispense it into the oil. Hold the funnel/bag/bottle several inches above the oil, remove your finger, and swirl the batter into the oil, overlapping it on itself until the batter is all dispensed.

    Fry until the bottom side is golden brown, approximately 1-2 minutes, then gently turn over with tongs and fry until the second side is golden brown.

  5. Drain and Serve:

    Carefully remove the funnel cakes from the oil and immediately place them on a plate lined with paper towels to drain off any excess oil. Sprinkle with powdered sugar, add your favorite toppings, and serve warm. Enjoy your homemade funnel cakes!
