Ingredients
    For the Dough:
  • 2 packets active dry yeast
  • 1 1/2 cup warm water (about 110°F)
  • 2 tablespoons sugar
  • 3 1/2 cups all-purpose flour, plus more if needed
  • 2 teaspoons kosher salt
  • 1/4 cup olive oil
  • Extra olive oil for greasing pan
  • For the Sauce:
  • 6 Roma tomatoes (halved)
  • 3 tablespoons olive oil
  • 15 ounces tomato puree
  • 2 tablespoons tomato paste
  • 3 cloves garlic (finely minced)
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • For Topping:
  • Grated Locatelli cheese for sprinkling
Instructions
    Making the Dough:
  1. In a bowl of a standing mixer, dissolve yeast in warm water and let it foam for 5 minutes.

  2. Stir in sugar, salt, and olive oil.

  3. Gradually add flour while mixing until the dough forms.

  4. Knead the dough for about 10 minutes until smooth and elastic.

  5. Place the dough in an oiled bowl, cover, and let it rise until doubled in size, about 1 hour.

  6. Preparing the Sauce:
  7. Preheat oven to 350°F.

  8. Arrange halved Roma tomatoes on a baking sheet, sprinkle with salt and pepper, drizzle with olive oil, and roast for 45 minutes.

  9. In a saucepan, combine olive oil, tomato puree, tomato paste, minced garlic, sugar, balsamic vinegar, basil, oregano, salt, and pepper.

  10. Simmer the sauce for 30 minutes until thickened, then add the roasted tomatoes and continue to simmer until desired consistency.

  11. Assembling and Baking the Pizza Pie:
  12. Preheat oven to 500°F.

  13. Grease a large baking sheet with olive oil.

  14. Press the risen dough onto the baking sheet to form a rectangle.

  15. Let the dough rest for 30 minutes, then prick the surface with a fork.

  16. Bake the dough for 15 minutes until lightly golden.

  17. Remove from the oven, spread the sauce over the crust, and bake for an additional 10 minutes.

  18. Let the tomato pizza pie cool for 5 minutes before sprinkling with grated Locatelli cheese.

  19. Serve warm or cold and enjoy your flavorful Sicilian creation!

Note
  • For a deeper flavor in the sauce, roast the garlic along with the tomatoes before adding them to the saucepan.
  • If you prefer a smoother sauce, blend the tomato mixture after simmering for a velvety texture.
  • Experiment with toppings like sliced onions, bell peppers, or olives to customize your pizza pie.
  • To achieve a crispier crust, preheat your baking sheet in the oven before placing the dough on it.
